La principale differenza tra "hooked e hookless" che si legge sul manuale mi sembra sia la pressione max per gomme di larghezza sotto 1,7", che peraltro non credo siano di interesse per la applicazioni che hai in mente. Sulla compatibilità però leggi il seguito di questo messaggio !!!

Hookless compatible tyres were limited. Feedback from customers at the time prioritised tyre selection over the rim weight advantages of hookless. At our core, we are all riders and although we know wider tyres and tubeless can provide many benefits, we will always represent the needs of the wider cycling community. For riders not ready to make the switch to low-pressure tubeless, we felt it was important to offer them the versatility of hooked rims.
Infine questa lettura sui cerchi hookless di Giant, dove viene specificato che i cerchi hookless costano meno, sono efficienti, ma compatibili sono con alcune tipologie di pneumatici (poi capisco che qui qualcuno ha detto che li ha incrociati senza badarci e non ha avuto problemi ... immagino per uso tubeless a pressioni basse e larghezza gomma >2" ... però io ci starei attento ad andare fuori dalle specifiche):

Hookless rims and tyre compatibility
A lack of traditional bead hooks means hookless rims are generally only compatible with tubeless or tubeless-ready tyres because standard clincher tyres require the bead hooks to stay seated on the rim when inflated.
The reality is far murkier however, with wheel brands discovering that not all currently available tubeless tyres are safe to use on hookless rims either, especially at the higher pressures used for road cycling.
A me pare sia chiaro (da tutto quanto sopra) che su gomme da strada o gravel a pressioni più elevate il rischio è molto maggiore, in particolare per montaggi con camera. Però mi sembra che il rischio stallonamento per accoppiamenti rim/pneu fuori specifica non sia nullo nemmeno per gomme da mtb montate tubeless ed a basse pressioni, secondo quanto scrivono i costruttori.
